Ingredients 3 large eggs 75 g. / 3 oz. castor sugar 75 g. / 3 oz. self-raising flour, sifted 50 g. / 2 oz. flaked almonds, toasted Chocolate balls or nuts to decorate Icing 350 g. / 12 oz. icing sugar, sifted 30 ml. / 2 tablespoons strong black coffee 30 ml. / 2 tablespoons rum 175 g. / 6 oz. butter, softened 25 g. / 1 oz. crystallized ginger Directions Mix the eggs and sugar together in a heatproof bowl. Put the bowl over a pan of boiling water over low heat and beat until very thick. Remove the bowl from the pan and gradually beat in the flour. Divide between two well-greased 18 cm./ 7 in.sandwich tins and put into the oven preheated to fairly hot (190°C/375°F or Gas Mark 5).
