Prep time: 15 min Cook time: 2 hour Total time: 2 hour 15 min (serves 4) Ingredients     1.5-2kg :  whole chicken     1  large bouquet garni      1/4 cup  olive oil      40  garlic cloves, unpeeled      1/4 cup  all-purpose flour       toasted croutons, for serving     salt and freshly ground pepper Preparation 1. Preheat oven to 190°C. Season chicken inside and out. Put bouquet garni inside and truss to close. Heat oil in a flameproof casserole dish and brown chicken on all sides. 2. Add garlic to casserole dish and cover. Mix flour with about 1 tbsp water to form a paste then spread it on edges of chicken. 3. Bake for 1 hour and 45 minutes.
