Prep time: 30 mins Cooking time: 10 mins (serves 4) Ingredients 600g: chicken breast fillets, cut into strips 40ml: olive oil 6 spring onions, roughly chopped 2 garlic cloves, finely chopped 100g; broccoli, cut into small florets 125g; mushrooms, halved 1 red bell pepper, cut into strips 100ml: sweet and sour sauce handful fresh coriander, chopped salt and pepper Preparation 1. Season chicken strips with salt and pepper. Heat a little of the oil in a large frying pan and fry a small batch of chicken strips over very high heat. Remove from pan and repeat until all chicken has been fried. 2. Heat remaining oil and fry all vegetables over very high heat for about 5 minutes. 3. Return chicken to pan and add sweet and sour sauce. Heat through and adjust seasoning. Garnish with fresh coriander and serve. From: Gulfnews
